Scrocchiarella on italialainen artesaanileipä , joka on leivottu hapantaikinajuureen. Sen salaisuus piilee vehnäjauhossa ja leivontamenetelmässä, jonka ansiosta leipä on päältä rapea ja sisältä kuohkea. Ilmakuplat kertovat, että leipää on työstetty pitkään. Esipaistettu pizzapohja on paistettu marmorikivellä arinauunissa. Paras lopputulos syntyy, kun leivän pintaa ei tukita liian suurella määrällä raaka-aineita. Pikainen paisto uunissa ja viimeistely ripauksella tuoretta oliiviöljyä takaavat parhaan lopputuloksen. Classica-taikinassa on käytetty ekstra-neitsytoliiviöljyä.
